Almond pasta

A rich and creamy pasta without cheese. The almond sauce blended well with pasta gives a unique taste. If interested you can add veggies too. This is my first pasta without veggies. Try other vegan versions Spinach avocado pasta and Spicy veggie pasta .


Ingredients:
  • Penne pasta - 2 cups
  • Almonds - 3/4 cup
  • Garlic - 3 cloves
  • Red chilly flakes - 1 tsp
  • Olive oil - 2 tsp
  • Salt - as per taste

Method:

Soak the almonds for an hour. Blanch it. Grind the almonds with garlic to a smooth paste.

Boil pasta as per packet instruction with a tsp of oil and salt. Cook the pasta crunchy enough to bite. Drain through a strainer. In a pan add olive oil or any oil and add chilly flakes.

Add the almond paste with water. Let it boil for 5 minutes in medium flames. If thickens, add water. Add pasta and mix well and cook for 10 minutes.

Serve hot or cold. The more time pasta soaked in almond sauce, tastes divine. Serve warm, if desired add ground pepper.


Note:
  • This type of sauce goes well with spaghetti or elbows.

It says add the almond paste with water. How much water? Should it be s little soupy as the pasta will finish cooking in it?

The water can be soupy, the almonds absorbs more water. You can add approximately add 2 to 3 cups of water.

It says blanch almonds, how would I do that??

Amber blanching almonds is after soaking in water for sometime drain the water and use your fingers gently to squeeze the almonds and loosen the skin. You can ask kids to do that its really fun :)

Do you add the water from blanched almonds to the paste? How much water do you add?

Chinicki you can use any water. Add 1 cup of water little by little to make a paste. U can add more too, since after a while it becomes dry.
