Nenthrangai or raw banana chips are so tempting that we cannot stop eating. Nenthrangai chips from Kerala or 'hot chips' in Chennai are very famous. They prepare with coconut oil. It gives the authentic taste.
Plantains you get in India and US are different. The plantains you get in US taste like nenthrangai. Try and enjoy the kerala chips at home.
Ingredients:
Method:
Heat oil in the wok. Draw a vertical line with the help of knife in the plantain, not deep enough only the skin part. Chop the corners. Peel the skin with the help of line made with knife. Soak plantain in water, keep immersed. Take 1/4 cup of water, mix salt and turmeric powder in it. Keep aside. Using the slicer, slice the plantains. If you are not comfortable doing straight in oil.
Once the oil is hot enough, take one banana out, wipe dry using a towel. Take a slicer and slice round pieces directly into the hot oil. Now add 2 tsp of water, turmeric and salt mixture. I promise you nothing will happen except the hiss sound.When fried well enough, the oil will stop bubbling and become silent - no hissing, immediately take the chips out and drain in the paper towel.
Repeat the process for the entire plantains.Store in an airtight container.
