Apple and cherry upside-down cake (Eggless)

I love baking, but i am impatient to see the end result. Will they turn moist or very hard..............???? This cake turned out to be delicious and moist one. Apple and cherry upside down cake can be made on a special day or a holiday dinner dessert.

It can be served as such or scoop up with a vanilla ice cream or even with a greek yogurt . Merry Christmas to all !!!!






Ingredients:


For Apple and cherry:

Apple - 2 (peeled, cored and cut into slices)
Cherry - 15 (pitted and halved)
Brown sugar - 1/4 cup
Lemon juice - 1 tsp
Butter - 3 tbsp

For cake:

All purpose flour - 1.5 cups
Baking powder - 1 tsp
Baking soda - 1 tsp
Butter - 1/2 cup
Milk - 1 cup
Sugar - 1 cup
Salt - 1 tsp
Lemon juice - 1 tsp
Vanilla extract - 1 tsp




Method:

Preheat the oven to 350 deg F or 180 deg C.

In a large skillet over medium heat, melt 3 tbsp of butter and brown sugar. Add lemon juice and apples tossing to coat. Cook for a minutes. Add cherries and cook further for a min. Remove from heat.

After it cools, Beginning with apples, lay them in overlapping pattern at a 9- inch baking pan. Arrange all the exteriors keeping the center place for cherries. At center add cherries and press slightly to fill the space. Pour the remaining syrup on the top not exceeding more than 1/4 th cup. Set aside.

Now coming to cake part, First mix the milk with lemon juice and keep aside. In a bowl sieve flour, baking powder,salt and soda.

In a separate bowl beat butter and sugar till fluffy. Add Milk mixture, vanilla and mix well; Gradually add flour mixture and beat until incorporated.

Pour the batter over fruit, without disturbing it gently spread over the edges. Bake for 25 to 30 mins or until a wooden tooth-pick inserted in the center comes clean.

Cool the pan rest for an hour. Invert the cake, and cut into wedges.
