Eggplant and potato curry

Eggplants have a unique taste. I love them in any form. Combined with potatoes and tomatoes tastes really good. It can be served with tortillas too. I like the fresh tomatoes to be added  but the canned ones gives a nice color :)

Baked potatoes

The baked potatoes is a best holiday dinner or family get together It is loved from the babies to old. Microwave are faster but oven baked are tastier.

Even the babies who has started solid food can have the baked potatoes with sour cream (no spice indeed).

Creamy pasta

I like tomato based pasta the spicy one. But if it is for kids or party I prefer this type of pasta. Kids love the white creamy color with here and there colored veggies.

If the veggies are stir fried in pan the color of vegetable reduces. So I use microwave method. You can add more cheese if kids love.

Mustard Greens with spinach

When I went shopping with my friend she told me to try the mustard greens. It has a little bitterness taste. But when combined with spinach the taste is different.

In winter the Punjabi's usually prepare this greens called "sarson ka saag"  with corn flour rotis. It lasts for long even if you do not refrigerate. Idle for travel too.

Chinese fried rice

Chinese Fried rice is enjoyed by many of us. I feel there is no such best version recipe for this. It all depends on your taste buds. You can add the veggies of your choice. Adding red bell pepper also gives a unique taste.

I have read in many sites telling, you can use the left over rice too. This is to avoid the stickiness of the rice. If you are using fresh cooked rice, remember to cool completely before mixing with the veggies. Likewise using sesame oil or olive oil too makes the difference. I used olive oil you can choose sesame oil too. Can be served with Gobi manchurian or tomato ketchup.

Eggless blueberry muffin

The first muffin i tasted was blueberry muffin. I love those berries in muffin. The blue part here and there in a white flour tempts a lot.

I had lot of milk powder and blue berries, when google searched i got the recipe for a cake, I did some changes and made as muffins.

Spanakopita (spinach pie with cheese)

I like the combo of spinach and cheese but whenever I think of buying it, the ingredients will always include egg. I thought of preparing myself without egg. I surely have to tell the spinach and cheese combination tastes heavenly.

Spanakopita is a Greek pastry. According to Wikipedia spanakopita is "It is in the burek family of pastries with a filling of chopped spinach,feta cheese (sometimes in combination with  ricotta cheese, as it is less expensive, and adds creaminess), onions or scallions, egg  and seasoning"


The cheese blended well with spinach so there was no need of eggs. I avoided lots of butter, to say the spray was really useful. If you don't have spray you can use a mixture of butter and olive oil. For easier way you can use frozen spinach too.

Phyllo sheets are layered with savory spinach and feta cheese. Spanakopita can be made ......

Ginger pachadi and colacasia fry

When I prepared sodhi, I made this ginger pachadi and colacasia fry. Ginger paachadi is good for digestion. Since sodhi has coconut milk, which is heavier, this pachadi and fry goes well with that. Sodhi, pachadi and fry makes a good combo. Colacasia can be replaced with potatoes.


This pachadi can be taken with pongal too.

Gobi Manchurian

Indo-chinese recipe is always a popular one, an Indian touch in Chinese recipe. The sweet and spicy sauce mixed with crunchy cauliflower gives a unique taste.  I always love to cook cauliflower because it is very easy to cut, cook ...:) Even at the time of parties I choose this vegetable every time. A lot of time consuming vegetable. 

The trick in this recipe is quick tossing in high flame. If you are really concern about deep frying you can bake the cauliflowers too.

Roasted bell pepper and tomato soup

Even though there are lot of varieties of soup me and Ro's first preference will be tomato. Addition of roasted bell pepper gives a nice aroma to soup. This bright and flavorful soup has very less calories too.

If you have lots of bell peppers - try this and freeze it. Adding cream or yogurt gives a nice twist but the color will be reduced.
