Chinese Fried rice is enjoyed by many of us. I feel there is no such best version recipe for this. It all depends on your taste buds. You can add the veggies of your choice. Adding red bell pepper also gives a unique taste.
I have read in many sites telling, you can use the left over rice too. This is to avoid the stickiness of the rice. If you are using fresh cooked rice, remember to cool completely before mixing with the veggies. Likewise using sesame oil or olive oil too makes the difference. I used olive oil you can choose sesame oil too. Can be served with Gobi manchurian or tomato ketchup.
Ingredients:
Long grain rice or basmati rice - 1 cup
Carrot - 3
Bell pepper - 1
Cabbage - 1 cup
Onion -1
Garlic - 3 pods
Scallions - 1 bunch
Soya sauce - 2 tsp
Olive oil - 2 tbsp
Ajinomoto - 1/2 tsp (optional)
Pepper and salt - as per taste
Method:
Cut the veggies in lengthwise. Pressure cook the rice with water in 1 : 1.5 ratio adding 1 tsp of oil for 15 minutes.
In a large skillet or wok heat 2 tbsp of olive oil, add the chopped onions and garlic and saute till soft. Then add scallions and fry. Save some green part for garnishing.
Add bell peppers, carrots and cabbage and fry in a medium to high flame. If using ajinomoto add it. It helps the veggies to be crispier. After the raw smell goes add soya sauce, pepper powder and salt and work in a high flame. Add the cooked rice and fry further for 5 minutes. Garnish with chopped scallions. Serve hot with Gobi manchurian.
