Eggless blueberry muffin

The first muffin i tasted was blueberry muffin. I love those berries in muffin. The blue part here and there in a white flour tempts a lot.

I had lot of milk powder and blue berries, when google searched i got the recipe for a cake, I did some changes and made as muffins.



Ingredients:

  • All purpose flour - 2 cup
  • Milk powder - 1 cup
  • Blueberry - 1.5 cup
  • Powdered sugar - 1 cup
  • Baking powder - 1 tsp
  • Baking soda - 1 tsp
  • Melted butter or oil - 3/4 cup
  • Milk - 1 cup
  • Vanilla extract - 1 tsp


Method:

Wash and dry the blueberries. Transfer them into a bowl and sprinkle some flour, if there is some wetness the flour will absorb it and will help to coat evenly on the batter.

Preheat the oven to 350 deg F. Line the muffin tray with cupcake liners.

Sieve the flour, baking powder and baking soda. In a large bowl mix the sieved flour with milk powder and sugar.

Whisk the wet ingredients separately and stir with the dry ingredients. Give a gentle mix. Do not beat. Add the berries and mix thoroughly so that it reaches all over the batter.

Fill the 3/4 part of the muffin pans and bake for 20 minutes or until cooked.
