Paneer Jalfrezi

Paneer jalfrezi and kadai paneer are similar in their ingredients and only vary in cooking method. Bell peppers and panner are wonderful combination. Jalfrezi is a simple stir fried method and can be stuffed in chapathi's and wrap in a foil for lunch boxes.

Ingredients:

  • Onion - 1,
  • Color peppers - 1 cup
  • Red chilly powder - 1 tsp
  • Coriander powder - 2 tsp
  • Turmeric powder - 1/4 tsp
  • Salt - as per taste
  • Cumin seeds - 1 tsp
  • Oil - 2 tsp
 To grind:
  • Tomato - 2
  • Ginger - 1 inch
  • Garlic - 4 cloves

Method:

Cut the panner to lengthwise. Chop the bell peppers and onions lengthwise. In the blender add tomato, ginger and garlic.
Grind to a fine paste. Heat a wok or pan with oil, add cumin seeds. Let it splutter. Add onions and fry for 2 minutes.
Add tomato puree and fry for 5 minutes. Then add red chilly powder, coriander powder, turmeric powder and salt and fry till the raw smell goes. Add bell peppers and 1/4 cup of water and cover with a lid. Allow the bell peppers to cook. Finally add paneer and give a nice stir. Switch off in a minute.
