Javvarisi payasam| Sago kheer

Javvarisi or sago or Tapioca is the easiest payasam/ kheer / pudding. Using condensed milk gives more creamier texture and rich in taste. These pearls are so cute and goes well for desserts.



Ingredients:

  • Javvarisi /Sago - 1 cup
  • Condensed milk - 1/2 cup
  • Water - 2 cups
  • Milk - 3 cups
  • Cardamon powder - 1/2 tsp
  • Ghee - 2 tsp
  • Cashews - 6

Method:

Boil the milk in a sauce pan. Simmer it for few minutes. Heat a pan with a tsp of ghee and fry cashews. Keep aside. In the same pan add a tsp of ghee add fry sago for 2 minutes in a medium flame. 
Boil 2 cups of water in a sauce pan add the fried sago. Cook till soft. Drain the water through a strainer. Add condensed milk in the boiling milk
If need, add sugar and combine well. Add the boiled sago and cardamon powder. Add the fried cashew nuts. Switch it off.


Serve warm or cold.

Note:
  • Frying sago in ghee helps the sago not to stick to each other.
  • Cook sago in water to avoid milk from curdling.
  • You can add sugar or jaggery in place of condensed milk.
