Pav bhaji

Pav bhaji is a famous street food. It is a combo of potato and other veggies. All the mashed veggies with the flavor of pav bhaji masala gives a wonderful taste you will long for. In our family we take it has a dinner with tomato soup.



Ingredients:
  • Potatoes - 3
  • Bell pepper - 1 
  • Carrot - 1
  • Cauliflower florets - 1.5 cup
  • Peas - 1/4 cup, beans - 1/4 cup
  • Tomato - 3 or tomato puree - 1 cup
  • Pab bhaji masala - 2 tsp
  • Grated ginger - 1 tsp
  • Grated garlic - 1 tsp
  • Red chilly powder - 1 tsp
  • Butter - 1 tbsp
  • Salt - as per taste

To serve:
  • Chopped onions - 1/4 cup
  • Lemon wedges

Method:


Steam or pressure cook the veggies. Boil the potatoes in the jacket, remove the skin Boil a cup of water and add grated ginger and garlic and boil for 5 minutes. Use the strainer and strain it, add red chilly powder and pavbhaji masala in the ginger-garlic water and keep aside.



Boil the tomatoes in large amount of water for 10 to 15 minutes. After it cool down remove the skin and puree the tomatoes in a blender. Mash the veggies and potatoes together.


Heat a tsp of butter in a sauce pan and fry bell peppers. Combine the mashed veggies, tomato puree and ginger-garlic water. Add water if necessary to have a thick consistency. Let it cook for 10 minutes in simmer. Add a tbsp of butter. Adjust salt and add cilantro.


Serve with onions and lemon wedges with toasted dinner rolls, bread or pav buns.
