Eggless vanilla cake

Baking is very easy and simple compared to other recipes when using correct measurement. Just mixing and bake it. I have never tried icing part, but when it comes to basic cake recipe it can be done easily. The evaporated milk gave me light brown color.


Ingredients:

  • All purpose flour - 3/4 cup
  • Corn starch - 1/4 cup
  • Sugar - 1/2 cup
  • Baking powder - 1 tsp
  • Baking soda - 1/4 tsp
  • Vanilla extract - 1 tsp
  • Butter or oil - 1/4 cup
  • Evaporated milk - 1 cup
Method:

Pre heat the oven to 375 deg F. Sieve both the flour with baking powder and soda. Mix all the dry ingredients together flour,corn starch,baking powder, baking soda and sugar. 
 
In a separate bowl mix evaporated milk,butter and vanilla extract. whisk together. Gradually mix the dry ingredients to the wet ingredients. whisk using hand or blender for 2 minutes and bake it for 15 minutes or till the tooth pick inserted in the center of the cake comes out clean.


Note:

If you like your cake to be white add milk or curd instead of evaporated milk.

Like the others I am intrigued by the spongy texture-yum! I have never used evaporated milk in a baked item, so good to know about the hue. I would have never thought it would turn out that way. However, it gives it a kind of rustic look which I like. Delicious post!

hi anu..first time on ur blog..and honestly the first sentences in this post is so me...i love baking but i stay away from icing..!! this cake looks soooo yummy.. a very nice texture.. have never used evaporated milk.. lovely clicks..bookmarking this to try and pinning.. i also have a food blog..a small space of mine..do check it out when time permits..
