Fruit kesari

I have a sweet tooth. During my childhood, whenever I feel like eating something I would say kesari, instant sweet that can be done in jiffy. Anyone can do it. No sugar consistency, no stirring too much, an simple dessert that everyone loves. The plain version has no fantasy but the fruit kesari is the fusion of fruits combined with kesari. Great for parties, festivals, weddings,...... 

A colorful combination for Holi festival. On this day, people hug and wish each other 'Happy Holi' and threw colors.

Ingredients:
  • Sooji/Rava - 1 cup
  • Sugar - 1 and 1/4 cup
  • Apple - 1/2 cup, peeled and chopped
  • Pineapple - 1/2 cup, chopped
  • Grapes - 1/2 cup
  • Water - 3 cups
  • Yellow food color - a generous pinch
  • Pineapple extract - 1/4 tsp
  • Ghee + oil - 1/4 +1/4 cup
  • Cashews - 6

Method:

Add 2 tbsp of sugar in apple and pineapple and keep aside(soak for 30 minutes). Heat a tsp of ghee and fry cashews till golden brown and keep aside.
Add the remaining ghee and oil in the same pan and fry sooji for 2 to 3 minutes. Meanwhile, boil the water in a sauce pan. After the sooji is fried add the boiling water to sooji and mix continuously.
Cover the pan with a lid and allow the sooji to cook. Add sugar and mix thoroughly. First it becomes watery then with moderate heat it tightens.
Add the food color and the chopped fruits. Mix well. Add fried cashews and pineapple extract. Switch it off.

Notes:
  • Soaking the fruit helps to get  out the sourness of pineapple and apple.

Kesari is one of my favorites too..though I love pineapple kesari..have never tried with mixed fruits...looks delicious
