Grilled veg sandwich

When I baked Eggplant sandwich, I tried this too. I used bell peppers of all colors. Try with whatever color peppers you have in hand. Great with green peppers too. This can be grilled in the oven too. I used stove top method. Try this for your dinner..........


Ingredients:
  • Italian bread - 1
  • Color bell pepper - 2 cups, sliced lengthwise
  • Onion - 1/2 cup, sliced lengthwise
  • Tomato - 1 , sliced round
  • Jalapeno - 1, sliced
  • Cream cheese - 1/4 cup or Mayonnaise - 1/4 cup
  • Cilantro - 1 tbsp, finely chopped
  • Garlic - 2 tsp, grated
  • Grated cheese - 1/4 cup or cheese slices - 3
  • Pepper and salt - to taste
  • Olive oil - 1 tsp + 1 tsp + 1 tsp for brushing
 

Method:

Heat a tsp of oil in a pan. Add onions and fry till golden brown in a low flame. Keep aside. In the same pan add a tsp of oil add bell peppers with salt and fry for a minute. In a separate bowl combine cream cheese, garlic and cilantro.
Cut the bread vertically, brush olive oil on top of one part and microwave for a minute or till warm. Apply the cream cheese mixture generously on the bread. Place the sliced onions on top.
Spread the bell peppers evenly on the bread. Arrange tomatoes on top and sprinkle pepper and salt. Add the grated cheese on top.
If you like spicy, add jalapeno on top and sprinkle some more cheese. Broil for 5 minutes or until the cheese melts.
Serve hot.
