Aviyal | Vegetable stew

Most of the dishes from Kerala have coconut in it and seasoned with coconut oil. For onam festival, they do this vegetable stew. It is so healthy too, you can add any type of vegetable of your choice, tastes so creamy and divine with coconut sauce.


Ingredients:

  • Carrot - 2
  • Plantains/vazhakai - 1
  • White pumpkin - 1/2 cup, chopped
  • Flat beans/ avarakai - 15
  • Drumstick - 1
  • Yam - 1/4 cup, chopped (optional)
  • Curd/Yogurt - 1/4 cup
  • Salt - to taste
  • Coconut oil - 1 tbsp
  • Curry leaves - 5

To grind:
  • Coconut - 1 cup, grated
  • Cumin seeds - 1 tsp
  • Rice flour - 1 tsp
  • Green chilly - 3

Method:

Chop the vegetables lengthwise. In a blender add coconut,cumin seeds, rice flour and green chilly. Grind to a fine paste by adding little water, say 1/4 cup.

Heat a pan with 1/2 cup of water into it. Add  yam, carrot and flat beans, after it is half cooked add pumpkin and drumstick. Add salt to taste. After it is cooked add the ground paste. 

Add curd and mix thoroughly.  Do not over boil after curd is added. In a small pan heat coconut oil and add curry leaves. Transfer to aviyal.

Serve with Paruppu adai or rice.
