Butterscotch pudding

I believed that butterscotch was a separate plant like vanilla bean. Then came to know butterscotch is a combination of brown sugar, vanilla and butter. The brown sugar gives the light color to the pudding. I used light brown sugar, may be if using dark brown sugar the color may be brighter. This pudding was so mild and delicious. An easy recipe adapted from a book written by Mollie Katzen.


Ingredients:

  • Cornstarch - 2 tbsp
  • Brown sugar - 2 tbsp
  • Milk - 1 cup
  • Butter - 1/2 tbsp
  • Salt - a pinch
  • Vanilla extract - 1/2 tsp

Method:

Combine milk, brown sugar, butter, salt and vanilla in a sauce pan, and place it over a medium heat. Do not boil.  Turn it off.

Place the cornstarch in a bowl and add half of the milk to make a fine paste, then pour other half and mix thoroughly and return to heat. Lower the heat, whisking often,, until the mixture comes thick and shiny. Pour the pudding into a serving bowl and sprinkle brown sugar on top. Let it cool and then cover the bowl with a plastic wrap tightly and refrigerate until cold.
