Potato sandwich

I learned lot of recipes from my sister, she usually make her sandwich this way. Potato sandwich is very easy to do also. A very filling breakfast which you will not feel hungry soon. If you are interested you  can add any combo of veggies. For richness and taste butter can be added in place of oil. A perfect lunch box too...

Ingredients:
  • Bread slices
  • Potatoes - 3
  • Carrot - 1

To grind:

  • Onion  - 1 (small)
  • Tomato - 1 (small)
  • Grated coconut - 1 tbsp
  • Cloves - 2
  • Cinnamon - 1 small stick
  • Poppy seeds - 1 tsp
  • Pepper - 2 tsp
  • Coriander seeds - 1 tsp (optional)
  • Cilantro - 1 tbsp
  • Salt - to taste
  • Oil - 2 tsp

Method:

Boil the potatoes till soft, remove the skin and mash it. Grate the carrot. Grind all the ingredients given to grind to a smooth paste.

Heat the small pan, with oil. Add the ground paste and saute till the raw smell goes. Add the grated carrot and saute for 2 minutes then combine the mashed potatoes adjust the salt and simmer for 5 minutes. Add cilantro.

Toast the bread in pan or grill with oil. On one side of the bread, spread the potato mixture generously. Close the other toasted bread. Cut into any desired shape. Serve hot.
