Tortilla noodles

I have to use half of the tortillas before expiry date, so thought of  making noodles with that, I usually do with left over rotis. With tortilla it tasted good. Just roll the tortillas and cut into strips and use your own imagination to make yummy noodles.


Ingredients:

  • Tortilla - 10
  • Bell pepper (red and green) - 1 cup
  • Cabbage - 1/2 cup
  • Onion - 1
  • Carrot - 1
  • Tomato sauce - 1 tbsp (or tomato-chili sauce)
  • Salt and pepper - as per taste
  • Olive oil - 1 tbsp 


Method:

Take 4 or 5 tortillas at a time and roll it. Then cut into thin strips. Do the rest of tortillas. Chop all the veggies into lengthwise.

Heat oil in a wide pan, add onions and cook in medium heat. After 3 minutes add bell peppers, cabbage and carrot and stir fry over high heat until they are tender.
Add tomato sauce, pepper and salt. Combine tortillas and cook further for 3 minutes.

Serve hot, garnished with green onions and a few dollops of  tomato sauce on top,  if desired.

Nice idea. I would never be able to make this. I love leftover rotis and guess the thought of doing something else with them will never happen. But this is tempting!
