Peanut salad

I make sure I do a salad once in a week. I use to send salad for kids snack box. A very healthy and protein rich salad. If you are not allergic to peanuts try this salad and you will sure love it. Every bite taste so good and healthy too....


Ingredients:
  • Boiled raw peanuts - 1 cup
  • Grated carrot - 1/2 cup
  • Chopped cucumbers - 1/2 cup
  • Chopped tomatoes - 1/4 cup
  • Chopped cilantro - 2 tbsp
  • Grated coconut - 1 tbsp
  • Lemon juice - 1 tsp
  • Pepper and salt - to taste

To temper: (optional)
  • Oil - 1 tsp
  • Mustard seeds - 1/4 tsp
  • Urad dal - 1/2 tsp
  • Green chilly -1
  • Asafoetida - a pinch


Method:

Boil the peanuts with salt and discard the water. Keep the vegetables ready. In a mixing bowl, mix all the vegetables, cilantro and boiled peanuts and add lemon juice to it. Give a nice stir.

Add grated coconut, salt and ground pepper to taste. If tempering, heat a pan and add the ingredients given under 'to temper' accordingly. Transfer to salad.

Toss well and serve.

Note:

  • If  raw peanuts are not in hand, use the regular peanuts by soaking overnight and pressure cooking with salt.
  • Tempering is for extra flavor.
