Ingredients:
- All purpose flour - 1 cup
- Sugar - 1/4 cup
- Butter - 2 tsp
- Salt - a pinch
- Baking soda - 1/8 tsp
- Water - 1/4 cup
Method:
In a mixing bowl add butter, baking soda, salt and sugar. Add a tbsp of water and give a vigorous whisk. Than add 1/4 cup of lukewarm water and keep for 5 minutes. Let the sugar dissolve completely.
Add the flour gradually and knead it to a soft dough. Keep it rest for 10 minutes. Knead and divide the dough into 5 equal parts.
Take a portion and roll it into a thin circle.Dust flour as and when needed. Roll it as thin as possible. Using the cutter cut vertically first then horizontally to form small diamonds.Carefully seperate them and keep it in a plate. Meanwhile heat oil in a small pan. Gently gather the diamonds and drop in a sprinkled way, cook in medium low flame, give a mix for even cooking. Deep fry till golden brown and drain in tissue paper to absorb the excess oil.
Repeat the process for the remaining dough. Store in an airtight container.
Note:
- The dough should be soft, not too tight or loose. If it is too loose add flour, and too tight sprinkle water.
- I used biscuit cutter, if you don't have you can use knife or pizza cutter.

ReplyDeleteMy grandma used to make these - both the sweet and the savory versions, when we were kids. We used to call them 'nimkis' and they were our favorite summer holiday indulgence! :)
