Cashew cookies

Cashew cookies ~ vegan version tasted so wonderful. In place of all purpose flour, whole wheat or half of wheat and APF can be used. After removing the cookies from oven it will look uncooked or soft. Don't panic. Wait to cool completely for serving. Easy to bake, so do try this and let me know how it tasted....




Ingredients:

  • All purpose flour - 1 cup
  • Brown sugar - 1/2 cup
  • Cashew nuts - 1/2 cup
  • Oil - 1/2 cup
  • Salt - 1/4 tsp
 
Method:

Sieve the flour. To toast the nuts, preheat the oven to 180 degree C. Spread the cashew nuts on a baking tray and bake them for 7 - 8 minutes. Remove the toasted nuts from the oven and let them cool completely. Grind the nuts coarsely and set aside.
Preheat the oven to 180 degree C. In a mixing bowl, combine the flour, salt and brown sugar. 
Combine the coarsely powdered nuts and mix well. Gradually add oil little by little to form a dough. The dough by itself taste yum!! Divide the dough into 15 portions and shape them using a cutter or press in the hand. Place them on a baking tray spacing about 1 inch apart.  
Bake the cookies in the preheated oven for 15 minutes at 180 degree C. Then remove them from the oven and let them cool down for 2-3 minutes before taking them of the baking tray. Place them on a wire rack to cool. Store in an airtight container.
