Beetroot halwa

Beetroot is a little sweetish vegetable. When I do normal curry I use to mix with rice and eat but prefer to have beet as halwa :) Spread as a jelly in bread for kids. They will love to have this vegetable jelly :)


Ingredients:
  • Beetroot - 1 cup, grated
  • Sugar - 1/4 cup
  • Milk - 1/3 cup
  • Cardamon powder - 1 tsp
  • Clarified butter/ghee - 1 tbsp
  • Cashews - 10


Method:

Grate the beetroot. Heat a wide pan with a tsp of butter or ghee and add the grated beet. Fry for 2 minutes in low flame. Add milk and cover it with a lid and allow the beet to cook, say 5 to 7 minutes.

Add sugar, cardamon powder and a tsp of ghee and cook till the water contents have absorbed and becomes thicker. With the remaining ghee fry the cashews and add it.

Serve with grated almonds.

Note:
  • I added half and half milk  to enhance the taste. You can add any milk of your choice.
  • If you don't have ghee in hand, you can add butter too.
  • Since milk is added the shell time of halwa is one week only, if refrigerated. If you want to have for long period add water to cook the beet.
