Sesame potatoes

This sesame potatoes taste very good with baby potatoes. If you don't get baby potatoes chop the potatoes into big chunks and follow the same method. No stuffing method is required, if you are using big potatoes. Roasted sesame seeds gives a nice flavor to this dish.

Recipe source : Vidhu mittal cookery book

Ingredients:
  • Baby potatoes - 10
  • Sesame seeds - 2 tsp
  • Ginger - 1 tsp, grated
  • Cumin seeds - 1 tsp
  • Oil - 1 tbsp

For stuffing:
  • Coriander powder - 1 tsp
  • Red chilly powder - 1/2 tsp
  • Dry mango powder - 1/2 tsp
  • Salt - to taste

Method:

Boil the potatoes until soft. Heat the pan and roast sesame seeds till it starts to crackle or until light brown. Mix the powder given 'for stuffing' and set aside.

Drain the potatoes and make a cross with sharp knife, without cutting the edges. Fill the potatoes with stuffing masala powders.

Heat a tbsp of oil in a pan, add cumin seeds and ginger. Add the stuffed potatoes and cook for 2 minutes; stirring constantly. Add sesame seeds and cilantro.

Serve with rice or bread or taste good by itself.
