Cilantro lime rice

Cilantro lime rice, a popular rice from Chipotle. It is so easy with less ingredients. It is a great dish to any gravy and can be used in burritos, tacos,.... Hint of lime and cilantro make the rice flavorful. In our home we like it little spicy, so I added green chilly. You can skip too...



Ingredients:

  • Basmati rice - 1 cup
  • Water - 1.5 cup
  • Cilantro - 3 tbsp, chopped
  • Lime juice - 3 tbsp or from 1 lime
  • Green chilly - 2, chopped finely
  • Oil - 2 tsp
  • Salt - to taste
Method:

Soak the rice for 30 minutes and strain water through a strainer.Heat the oil in a medium pan. Add green chilly, 1 tbsp of cilantro and saute for a minute.

Stir the rice, lime juice, cilantro and salt to taste. When everything is combined, taste to see if it needs more salt, lime juice. Add water and cover the pan with lid, lower the heat and continue to cook slowly for 10 to 15 minutes. Use a fork for fluffing the rice. 

Serve warm with black beans or any curry and top with more cilantro.

  8. OK... maybe this was a no-brainer and I should have looked more carefully at the pics but your method doesn't say to add the 1.5 cups water to the rice, it simply says drain the water. I thought it was strange that this rice only cooked in a few tablespoons of lemon juice, cilantro and chili's, 2tsp. oil but I tried it and it stuck. Please fix the recipe! Thanks
