Tomato pineapple salsa

Salsa - Goes well with chips, burrito, taco and as your imagination goes........... Pineapple gives a nice flavor and taste, when combined with tomato it gives a nice tangy aromatic salsa. Prepare salsa on your own way, skip or add the ingredients of your choice. Green onions can be replaced by red ones. Before using it store in the refrigerator for an hour to enhance the taste.

Sukhiyan

My amma's neighbor used to prepare this for every Ganesh chathruthi  and give us. Till that we were not familiar with this recipe. Then I came to know from browsing it is a Kerala snack. While served hot the outer layer will be very crispy, but after it cools it just becomes soft. Try this version of salty layer outside and sweet inside.

Poondu parupu podi | Garlic roasted gram powder

Parupu podi tastes very nice with hot rice and a dollop of ghee. There are many varieties too. Usually many do with toor dal and pepper combo. I love this roasted gram with garlic, tastes and smells so good. A very simple and easy to do recipe.

Keerai pongal | Spinach with rich and dal

Keerai pongal, I have never tasted and heard too, till I tasted at Hema's (she is a blogger) home. I liked this pongal so much that I started to do frequently. I do this with rice, wheat rava or quinoa. All of them taste so good. A whole meal combined with dal and vegetable is healthy and filing too.

Butterscotch pudding

I believed that butterscotch was a separate plant like vanilla bean. Then came to know butterscotch is a combination of brown sugar, vanilla and butter. The brown sugar gives the light color to the pudding. I used light brown sugar, may be if using dark brown sugar the color may be brighter. This pudding was so mild and delicious. An easy recipe adapted from a book written by Mollie Katzen.

Potato sandwich

I learned lot of recipes from my sister, she usually make her sandwich this way. Potato sandwich is very easy to do also. A very filling breakfast which you will not feel hungry soon. If you are interested you  can add any combo of veggies. For richness and taste butter can be added in place of oil. A perfect lunch box too...

Urundai kuzhambu

I always think urundai kuzhambu is a big process and try to avoid it to do often, but this time I tried for a small get together it was very easy and I did the microwave version which helped my work even faster.  Try with both the dals that makes your urundai(balls) soft. When you try the microwave method do not microwave it for more than a minute, otherwise it will be dry.

Try this simpler version and you will feel urrundai kuzhambu is also very easy to do.

Aapam | Rice with coconut pancake

Aapam is a traditional recipe in Kerala. I learned this aapam from my sister. Aapam is different from other regular pancake, soft inside and crispier outside. They make different versions with or without yeast. Try this simple version of aapam. It can be served with plain coconut milk and sugar, sodhi or vada curry.

Blueberry lemon cake

It's one year of blogging, cannot believe this. This one year of blogging gave me lot of new friends, helped me to try new Indian and other continental recipes. Learning more about photography and baking.Thanks to all my readers and blogger friends for your support and encouragement. At last in the one year of blogging I tried to complete my 100th post.

Coming to recipe, blueberry lemon cake is very moist with buttermilk and lemon flavor. If interested, you can add sugar on top and bake.
