Garlicky potato

As a kid, I had this garlicky potatoes often. My amma used to prepare this for lunch box with any variety rice. This is very simple to do. My kids love to eat with tomato sauce. The garlic flavor mixed with potatoes would taste awesome. If you want more crispier add more oil and cook in a low-medium flame. Turmeric powder gives nice color, if you don't have skip it.

Chimichanga

Chimichanga also known as chimmy chonga is a deep fried buritto that is popular in Tex-mex cuisine and in Mexican states.

When comes to vegetarian, it is prepared with flour tortillas by filling with vegetable, black bean and rice with cheese and spice. Nowadays many restaurants offer non deep fried chimichangas. Many of them bake or shallow fry it. This is shallow fry version which turned out crispier too. Try to add or less any ingredients as per your taste.

Blueberry sparkling lemonade

This recipe was shared from my friend. The drink is so refreshing and you will really like blueberry in this form. Perfect for summer and a great holiday drink. The blueberry lemonade puree can be stored in refrigerator. Once the puree is done you can mix plain water, sparkling water or the spirit of your choice.

Eggless vanilla cake

Baking is very easy and simple compared to other recipes when using correct measurement. Just mixing and bake it. I have never tried icing part, but when it comes to basic cake recipe it can be done easily. The evaporated milk gave me light brown color.

Sambar (Restaurant style)

In India each state has different tastes in their food. My Andhra friends do the same sambar for tiffins and rice but in Tamilnadu they do a separate sambar for tiffin varieties like idli, dosa.. The main difference is they don't add more tamarind water in idli sambar.It will not be as tangy as the sambar done for rice.

I get the nice red color for sambar by adding karnataka chilli or kashmir chilles. Even you can skip the grinding part but it really enhances the flavor and tastes like hotel sambar.

Paneer butter masala

I do this panner butter masala very occasionally. It was my niece birthday she asked for any panner dish. So I thought of doing this panner gravy. It is very rich in taste. If you don't use heavy cream, grind cashew with milk and add the paste in the gravy. It can be served with roti.

Aloo paratha (bread with potato stuffing)

A bread with potato stuffing is perfect for lunch boxes and a filling food. Adding more cilantro gives a natural flavor to the parathas. the filling can be done earlier and stored in refrigerator.

This is delicious with natural yogurt and pickle. You can stuff any type of vegetable you want like grated carrot, cauliflower, cabbage, spinach,.....
