Mango kova

I was having heavy cream in my refrigerator, I want to use before it spoils. Then from scratch I thought of doing this.

In taste it was really like palkova, an Indian dessert. Adding mango pulp in this I named as mango kova. A very quick recipe and an easy dessert too. Try it....

Aval payasam

Payasam is a traditional recipe in south India. There are lot of varieties. Payasam is like pudding, but not so thick in consistency. Usually it is prepared with milk and sugar or brown sugar garnished with cashew and almonds.

My sister often do this. She is the one who thought me. A very easy and simple one. Perfect dessert for any time.

Cabbage yogurt salad

There are some vegetables that I cannot eat raw. Cabbage is one among them. But somehow I like this salad very much. It doesn't have any raw smell of cabbage too.

Cabbage mixed with peanut and yogurt gives a unique taste. The best salad to beat the summer. Try this and for sure no one will believe it is a cabbage.

Baingan bharta

Traditionally in India, they roast eggplant using charcoal or wood for cooking. The roasted eggplant gives nice flavor for the dish. It can be cooked on the top of cooking range too.

This gravy should be cooked in medium flame till the oil separates from the dish.

At our home we all love this white legume. This is very simple to do and a protein rich food and perfect for lunch boxes. We love chickpeas in any form like chana masala, salad, pulao,..

You can add any veggies of your choice or can be prepared without veggies too. For color I added bell peppers. If you are using canned beans, you can prepare it very soon.

Tomato dosa

Tomato dosa is very easy to do. No need of fermentation, the tomato gives the nice flavor and color too.  Since we are adding rice the dosa will be crispier. You can add toor dhal too.

You can soak rice in the noon and prepare for dinner. Tomato and red chilly gives nice color.

Vendakkai kara kuzhambu

I don't cook dhal daily. I do this type of kara kuzhambu or vatha kuzhambu. This type of curry will be little thick and little spicy. There is no onion or garlic in this curry. You can add brinjal instead of okra. It can be served with plain rice and any dry curries.

Mocha coffee

Very rarely I prepared flavored coffee. I bought this new coffee mug so I prepared this mocha coffee immediately :) There are lot of versions, this is the simpler version. This mocha coffee can be served as hot or cold.

During summer mocha coffee can be served with lots of ice and at winter you can have it hot.

Bread sandwich (Kids lunch box)

I love Bento lunch box so much. I wish I could go to school or work for the bento :) My son Ro likes banana sandwich. A very easy to go recipe.

One serving of veggie and fruit with nuts with banana is a wholesome and healthy lunch for kids. For picture I arranged fruits and veggie :)  I wish I could do this daily. You can cut the veggies and fruits as they desire. The bread can be shaped with cookie cutter too.
