Whipped feta with roasted peppers

When I buy tortilla chips, my kids need avocado too for Guacamole. This time for a change I tried dip with roasted bell peppers.This recipe was from a book called "The joy of cooking". It was very creamy and the roasted pepper tasted very good.

If you like to avoid more spice, add chopped Jalapeno peppers or green chilly at the end. 


Ingredients:

Red bell pepper - 1
Feta cheese - 1/4 cup
Olive oil - 2 tbsp
Jalapeno peppers or green chillies - 1
Lemon juice - 2 tbsp
Pepper and salt - to taste


Method:

Roast the bell pepper in the stove top using thongs or in the grill. Remove the skin and chop it. In a blender or a processor pulse feta cheese, add 1 tbsp of oil and pulse feta until creamy. Add chopped bell peppers, jalapeno peppers, black pepper, salt and pulse until they are all combined. Gradually add 1 more tbsp of olive oil and lemon juice.

Serve with crackers or pita.
