Almond and cashew fudge

I have tasted the almond and cashew sweets, but never tasted with milk powder. My MIL do this for any special occasion. This was prepared by her only.

I don't want to have more because I was worried that I will gain more weight :), but tempted me a lot and ended up with eating more.



Ingredients:

  • Almonds - 2 cup
  • Cashew - 1 cup
  • Sugar - 3 cup
  • Clarified butter(ghee) - 1.5 cup
  • Milk powder - 1 cup


 Method:

Soak almonds and cashew separately in hot water for an hour. Peel the skin of almonds, grind cashew and almonds smoothly together with little water. The consistency should be thick.

Heat a large non stick pan with the ground almond paste and sugar. Keep stirring. Add 1 cup of ghee little by little in regular intervals and keep stirring until it reaches the soft- ball consistency. Switch it off.

Mix the milk powder with half cup of ghee in a bowl without lumps. Then mix this in the almond and cashew mixture.

Then transfer into a greased plate to let it cool down. Then cut into small squares or any desired shape.

Note:

The soft ball consistency is when you take a small amount of paste in hand it should form a small ball without sticking.

The more almonds the fudge will be soft or you can use the same ratio too.

The milk powder helps to increase the quantity and the taste will be also be different. No need to heat after the milk powder is added.

  3. I will remember to make it for the next sweet making celebration. The addition of milk powder must give a milk like flavor. Thanks for sharing. If I were you I would eat them all up and have a hot cup of chai.

  7. This double nut fudge is a new one for me! It looks so creamy and delicious. I will need to try this-saving the recipe. With so little ingredients, I know that one bite will be bursting with nutty taste. Great post!
