Beet cake

I would not say this is dessert, but great with a tea time snack or even breakfast. I did not use sugar in this cake, my beet was sweeter and I mixed some honey. If you have a sweet tooth add one fourth cup of sugar. More than a cake it was like a sweet bread.

The color of the cake was good, but not perfect like velvet cake. I skipped all purpose flour and used multigrain flour.


Ingredients:

Multigrain flour - 1 cup
Baking powder - 1 tsp
Baking soda - 1 tsp
Salt - 1/4 tsp
Walnuts,raisins and dates - 1/4 cup
Grated Beet - 1 cup
Honey - 1/2 cup
Oil - 1/2 cup
Curd - 1/2 cup
Milk - 1/4 cup (optional, according to the batter consistency)
Cinnamon powder - 1/2 tsp
Vanilla extract - 1 tsp


Method:

Pre-heat the oven to 375 deg F.

Sieve the flour with baking powder,salt and soda. Keep aside. Grind the grated beet and mix all the wet ingredients together.  Add the cinnamon powder.

Mix the wet ingredients with dry ingredients, use milk if the batter is too thick. Mix the nuts in batter thoroughly.

Transfer to a baking pan and bake for 15 minutes or till the tooth pick inserted in the cake comes clean.

  6. I have never baked with beets, but I am slowly learning how wonderful it can be! Your cake looks so moist and tasty. I am surprised that beets are not a more commonly used ingredient in the US. Your picture convinces me-delicious!
