When it comes to variety rice I do it very rarely. My kids doesn't like the rice to be dry, but they love the tomato rice. So I mixed tomato and added grated carrot which turned into aromatic and healthy pilaf.
You can use the same method and use any vegetable like beet, spinach.

Soak the rice for 30 minutes. Wash and drain them. Cook the rice with water in the ratio 1:2 in a pan or pressure cooker(1:1.5). After the rice is cooked cool them in a wide plate.
Chop the onions and tomatoes finely. Grate the carrot and keep aside.
In a wide pan add oil and butter. Add peanuts and cashews and fry them. Add the slitted green chillies, onions, ginger - garlic paste. Fry until onions are translucent. Add tomatoes and cook for a minute. Then add grated carrot,salt and cook for 5 minutes covered.
Add the cooked rice and mix. Garnish with cilantro. Serve with tindora curry or raitha.
