Soup is always comforting to have in winter. Broccoli has many health benefits with low calories and easy to cook. Try this creamy broccoli soup without cheese or milk.

In a tsp of olive oil saute garlic and onion. Add broccoli with water and cover for 5 minutes. Remove from fire.
Allow it to cool. Puree the soup using a blender. In a stock pot, add a tsp of oil and saute carrot.
Pour the soup and let it boil for few minutes. Add coconut milk and wait till it heats. Do not over boil. Add salt and pepper to taste.
Serve hot.
