Potato roast

Mostly I add potatoes to the other vegetables and do as a combo, rarely I do roast or garlicky potato. My kids love potatoes without any masalas, they love to have the plain roast, will post soon. This roast goes well with rice or any roti's too.


Ingredients:
  • Potato - 10, red and white or any
  • Onion - 1
  • Red chilly powder - 2 tsp
  • Coriander powder - 3 tsp
  • Dry mango powder - 1/4 tsp, optional
  • Cumin seeds - 1 tsp
  • Lemon juice - 1 tsp
  • Oil - 4 tbsp
  • Cilantro - to garnish
  • Salt - to taste

 Method:

Chop the onions into big chunks. Using a blender pulse the onions. It should not be paste. Mix the masalas red chilly powder, coriander powder, dry mango powder(if using) and salt in a bowl.
Wash the potatoes. Boil the potatoes in their jacket. When it cools, cut them into 4 big pieces with the skin. Heat a wide pan with oil, add cumin seeds. After 30 seconds add the onions and fry till the raw smell goes.
Blend in masala powders to the onion and keep stirring. Do not burn the masalas. Immediately add potatoes and give a mix. When masalas are well coated in potatoes, fry in low medium flame for 10 to 15 minutes. Add the chopped cilantro and lemon juice.
Transfer to the serving bowl.
Note:
  • If you feel the potatoes are sticking to the pan, spray some oil.
