Coconut rice is one of my favorite variety rice when I was a kid, my mom used to pack for lunch box to school with potato fry or colacasia fry. Nowadays considering of health, that coconut should not be fried more, I avoid preparing this. Once in a while this aromatic rice is perfectly ok. Kids will love this, give a try......

Chop the green chillies finely. Heat oil and ghee in a pan, add mustard seeds, allow it to crackle. Then add urad dal, cashews, green chillies, red chilly, curry leaves and asafoetida. Now add grated coconut and saute in low flame till moisture leaves.
Add a tsp of oil in the cooked rice and keep aside to cool. Fry for 3 to 4 minutes in low flame till nice aroma rises. Now add required salt, sugar and give a quick stir. Add the cooked rice and mix well.

Note:
- If using raw rice, cook the rice with water in 1:2 ratio, if using basmati rice cook the rice with water 1:1.5.
- While cooking the rice add a tsp of oil, so that each grain will be cooked separately.
