Olan is a simple dish done with ash guard and coconut milk. This is one of the main dish in Onam sandhya celebrated in Kerala. It can be done in yellow pumpkin too. A tasty and flavorful side dish. Give a try you will sure love it....

Chop the pumpkin into small chunks. Slit the green chillies. Heat a sauce pan and boil the third coconut milk and add chopped pumpkin cubes, green chillies and salt. Cook till soft but not mushy.
Add second coconut milk and boil for 2 to 3 minutes. If the gravy is too watery, add a tbsp of rice flour mixed with 2 tbsp of water( I didn't use). Add the thick coconut milk adjust salt and heat for a minute. Do not boil more than that. Heat a pan with coconut oil add curry leaves.
Transfer to olan. Serve with rice.

- Thin(third) coconut milk - 1 cup
- Second coconut milk - 1 cup
- Thick (First) coconut milk - 3/4 cup
- Green chilly - 2
- Curry leaves - 2
- Salt - to taste
- Coconut oil - 1 tbsp

Notes:
- A combo of ash guard and yellow pumpkin can be used or any one pumpkin can be used.
- If using canned milk, add 3 tbsp of milk and add 1 cup of water for third milk. For second milk add 5 tbsp of milk with 1 cup of water. For thick milk, use as such.
