Creamy spinach pasta

Creamy spinach pasta - is the creamier version and by adding spinach to the pasta is quite healthier. I have already tried spinach avocado pasta which is vegan version but this is loaded with milk and cheese. you can try with elbow pasta or macaroni. Kids love mac and cheese, try this and name it as green mac and cheese. They will love it. 



Ingredients:
  • Elbow pasta or macaroni - 2 cup
  • Spinach - 1 cup
  • Onion - 1, small
  • Garlic - 2 cloves
  • Milk - 1/2 cup
  • Olive oil - 2 tsp
  • Butter - 2 tsp
  • Parmesan cheese - 1/4 cup 
  • Roasted walnut - to garnish
  • Pepper and salt - to taste

Method:

Heat a pan on medium flame and add olive oil. Fry onion and garlic for 2 minutes or till onions are translucent. Add spinach and fry till it is cooked. Meanwhile boil pasta as per packet instruction and drain through a strainer.
After the spinach is cool, grind in the blender. Add 1/4 cup of milk and grind to a fine paste.
Heat the pan with butter or olive oil and add the spinach paste. Add more milk gradually and adjust the consistency. Transfer the pasta and stir. Add the cheese.
Transfer to a serving plate and add roasted walnuts and grated cheese on top. Serve hot.

I've made this a few times - delicious! Even the pickiest eater I've ever met loves it!
Tonight I was making it and realised I was out of Parmesan so substituted for Gruyere and it is just as amazing!
I also try to slip in some leeks for extra pop
