Vanilla cake with yogurt


Hot pot cooking turns 2. A long and lovely journey with blogging world. Thanks to all my friends, readers and supporters. After coming to India, I have not started taking any pictures or blogging. I want to post some simple recipes. This was in my draft so long..... When stepping into 3 year I want to start again...with more recipes.

I have already post Basic vanilla cake with evaporated milk. This one is with yogurt with more spongy. This recipe was adapted from Eggless baking of Nita mehta book. I did a simple frosting with rainbow sprinkles.


Ingredients:
  • All purpose flour - 1.5 cup
  • Sugar - 1 cup
  • Yogurt - 1 cup
  • Baking soda - 1/2 tsp
  • Baking powder - 1.25 tsp
  • Oil - 1/2 cup
  • Vanilla extract - 1 tsp

For frosting:
  • Crisco (vegetable shortening) - 1 stick
  • Confectionery sugar - 1 cup
  • Vanilla extract - 1 tsp 

 Method:

Pre heat the oven to 350 deg F. Grease the 8 inch pan and keep aside. Sieve the flour. Beat the yogurt and sugar. Add baking soda and baking powder and mix well. Keep aside for 5 minutes.
The small bubbles will appear on the mixture. Add oil and vanilla extract.
Combine the flour gradually and mix well. Pour in the greased pan and bake for 20 minutes or the toothpick inserted in the middle comes out clean.
Cool completely.

For frosting:

Beat the sugar and crisco with an electric beater. Add vanilla extract and beat to form a smooth thick paste.
Apply a smooth layer on top of the cake and add rainbow sprinkles on top.
