Besan Zucchini

I love this green squash.  Usually I add with pasta and do some side dishes. I wanted to give a try in Indian way, so simple and easy dish with no onion and no garlic.
Ingredients:
  • Zucchini - 2
  • Besan flour/garbanzo flour - 1.5 tbsp
  • Red chilly powder - 1 tsp
  • Ajwain seeds/carom seeds - 1 tsp
  • Oil - 1 tbsp
  • Cumin seeds - 1/4 tsp
  • Salt - as per taste

Method:

Cut zucchini vertically and chop into tiny pieces. Mix gram flour, red chilly powder, salt and ajwain seeds with zucchini.

Combine well that zucchini is coated with flour and carom seeds. Heat oil in a pan for 30 sec. Add cumin seeds and transfer the zucchini and cook covered till zucchinis are tender.

Add cilantro and serve with roti or rice.

Note:
  • If you want the zucchini in gravy consistency cover and cook for longer time. The more you cover and cook the zucchini leaves water and turn little mushy.
