Sandwich roll ups

Roll up sandwiches loaded with lots of vegetables are so healthy and ideal for parties too. Warm up the roll ups and slice the veggies and give the choice for guests to wrap their own sandwiches. Roll ups sandwiches and any type of soup is a complete dinner. 

Ingredients:
  • Roll ups - as per need
  • Guacamole - 1/4 cup
  • Color peppers or green peppers - 1
  • Cucumber - 1  
  • Onion - 1 
  • Tomato - 1
  • Olives - 5, pitted and sliced
  • Salt and pepper - to taste

Method:

Slice the vegetables round. In a microwave safe bowl add the sliced bell peppers sprinkle salt and pepper to taste and microwave for a minute or stir fry the bell peppers in the pan. Heat the roll ups on both sides in a wide pan. If needed, spray some oil on both sides.
Spread guacamole generously on one side of the roll ups. Arrange the peppers, cucumber, onion, tomatoes and olives on top of the guacamole. Roll them tightly. 
Cut diagonally and serve immediately.
