German Apple pancake

German apple pancake or apple upside down cake or an apple pie, what should I say. It tasted me everything. An easy recipe, great for a wonderful beginning of the day. The base didn't have added sugar but tasted so good with the apple base. It works wonder in microwave within 10 minutes. Try this pancake and you will want it for breakfast for most of the day.......

Ingredients:
  • Buttermilk complete pancake mix - 1 cup
  • Water - 3/4 cup
  • Vanilla extract - 1/2 tsp
  • Ground cinnamon - 1/2 tsp

Apple topping:
  • Butter - 1/4 cup
  • Apple - 1
  • Brown sugar - 1/4 cup
  • Ground cinnamon - 1/4 tsp


Method:

Peel and slice the apples thinly. Place a butter in a 9 inch microwave pie pan. Microwave for a minute. Stir in sugar and cinnamon.
Arrange the apples on the pan. Cover and microwave for 3 to 4 minutes or until apples are tender.

To prepare batter, place pancake mix, water, vanilla and cinnamon in a bowl and whisk without forming lumps. Microwave, uncovered, for 3 to 5 minutes or until a toothpick inserted comes out clean.
Let stand for 5 minutes, then invert on a serving bowl.
