If you don't have rice flour you can soak the rice and do. That would be more softer too, for that kind of base see sweet kozhukattai.
Ingredients:
- Rice flour - 1 cup
- Water - 1 cup (may be more 1/4 cup)
- Salt - as per taste
- Oil - 1 tsp
- Coconut - 1/2 cup
- Brown sugar or jaggery - 1/4 cup
- Cashew - 1 tsp
- Cardamon powder - 1/4 tsp
Method:
Heat the pan with grated coconut and brown sugar in a medium flame. Add the cardamon powder and roasted cashews and give a nice stir till it thickens and forms into a ball. Switch it off. Allow it to cool and make small balls.
In a wide pan add the rice flour and salt. Meanwhile boil the water. Add the water little by little to the flour and mix in the ladle.(I used 1 and 1/4 cup of water) Allow to cool then add a tsp of oil in your hand and knead the dough to a smoother consistency.
In the center keep the coconut balls and close it. Press the other half to stick together as given below
Seal it carefully and press and fold to form a design or simply press with fork at the ends. steam the modaks or kozhukattais in the steamer for 10 minutes.
Let it cool completely and remove carefully without breaking.
Note:
- I used idiyappam flour here. It took more than a cup of water for me. So see the water level to form the dough.
- Filling can be done and stored in refrigerator too.
- You can mold them like money bag too.
