Cashew coconut burfi

Wish you all a wonderful and happy Diwali!!!!

Tried this sweet for first time, got the burfi  shape and texture :). I really wonder about the color, all I used was white ingredients but my color was really brown, but the taste was very nice with cashew in it. For diwali , I wanted to try this simple sweet with easy ingredients and wanted like burfi easy for packing to friends.



Ingredients:
  • Cashews - 1 cup
  • Grated coconut - 1 cup
  • Sugar - 2 cup
  • Milk or water - 1/4 cup
  • Ghee - 2 tbsp
  • Cardamon powder - 1/4 tsp

Method:


Grate the coconut without the brown parts (but you may wonder how my sweet is brown :)) for sure I don't why it changes). Soak the cashews in milk or water for 1 to 2 hours.


Grind the cashews and coconut to a fine paste by adding the soaking water or milk. If need, you can add more water too. The more watery it takes time to form burfi. Combine the ground paste and sugar and let it boil in a wide pan.

Keep stirring in high to medium flame. Add ghee and cardamon powder and give a nice stir. Meanwhile grease the pan. When it all comes together leaving the sides your burfi is ready. Immediately pour in the greased plate.

Let it cool for 10 minutes and cut into desired shape. Cool completely before serving.

Note:
  • Since cashew and coconut are both oily, it doesn't absorb more ghee. 
  • If you want more quantity you can add the milk powder combined with ghee at last stage, mix well and pour in greased plate.
