This cake is free of dairy items and baked with water, I wondered how will it taste. So want to try for a long time. The cake turned out so good. Dates and brown sugar gives nice color for this cake. If you like, add walnuts or any nuts of your choice. If adding white sugar reduce the sugar.

Sieve all purpose flour and baking soda twice and keep aside.
In a sauce pan add sugar, dates, raisins,cinnamon powder,salt,water and vegetable oil and heat in a medium flame. When you see the bubbles turn to low flame and let it boil for 20 minutes. When boiling the cinnamon flavor will be divine.
Let it cool completely.( I did this a day before and made it to cool overnight and baked in the morning). After it cools down, Mix the flour little by little. Bake it in 375 deg F for 30 to 40 minutes or when a tooth pick inserted in the middle of the cake comes out clean.

Note:
- If water is reduced more, try reducing the flour. Make sure it is not too tight.

ReplyDeleteThis cake looked really cool, so I tried out the recipe today. The one thing I didn't like was that the cake tasted really doughy and flour-y. I think I'd use 1.25 to 1.5 cups of flour instead of two cups.
