Spinach avocado pasta

Avocado is many of our favorite. I usually prepare guacamole, chapathis. This time I tried with pasta which turned out very yum!!! When searched in Google, I got the recipe with basil. Actually I wanted to use fresh basil instead of spinach but I didn't have that, so tried spinach which was also very tasty.

If you are using basil you can just pulse it. No need to cook. Spinach avocado pasta was very creamy without butter and cheese. A very quick recipe indeed.


Ingredients:

  • Pasta - 2 cups
  • Spinach - 1/4 cup
  • Avocado - 1
  • Garlic - 2
  • Olive oil - 1 tbsp
  • Pepper and salt - to taste
  • Lemon juice - 2 tbsp


Method:

Boil the pasta as per package instruction. Drain it.

Heat a small pan add a tsp of oil with spinach and garlic. Saute till it is cooked. Using a food processor or blender pulse the spinach with ripe avocado, olive oil, pepper, salt and lemon juice. Pulse till creamy. Mix this creamy mixture with cooked pasta. Serve immediately.

Note:

If you like it to be spicy, add green chillies or jalapenos with spinach while frying.

  25. made it tonight, husband loved it. I actually liked it better after it was refrigerated a while--guess it became a pasta - avocado - spinach salad. It was delicious hot or cold!

    yes it is 1/4 cup cooked spinach.1/2 cup raw spinach will yield 1/4 cooked one.

  44. Candy it is ok if you skip garlic but blender I don't think so, but there is a way of trying chop spinach finely and mash the avocados and try. Hope this helps.

  49. I'm trying this this week with brown rice pasta. Until now the only way I would eat avocado is just plain with slightly toasted bread or cut up in a salad but this one caught my eye!

  50. This was delicious! I cut up, pan fried and added some vegan Italian sausage to it. I think it's very versatile and could have a lot of different things added to it to get different flavors.

  55. So good. Love this recipe. I added a bit of heavy whipping.cream so it would be a bit creamier and it was so good!! Also topped with a bit of parmesan cheese. Love my dairy lol.
