Tomato garlic pickle | Thakkali poondu thokku

Whenever in hurry and there is no side dish for chapathis, my mom do this. She avoids garlic. But adding garlic gives a nice flavor. A very easy and instant pickle goes well with any food. Top on bread, side for idli, dosa and roti, Combine with rice and name it as tomato garlic rice. You will really wonder how this little tomato help in all our menu. Perfect with curd rice too. Since we don't add water it stays more than a week in refrigerator.



Ingredients:
  • Tomato - 4
  • Garlic - 5 cloves
  • Red chilly powder - 1 tsp
  • Salt - as per taste
  • Oil - 2 tbsp
  • Mustard seeds - 1/4 tsp
  • Curry leaves - 5

Method:

Grind tomato,garlic, red chilly powder and salt into a puree. Heat a heavy bottomed pan add 2 tbsp of oil add mustard seeds and wait till it splutters. Add curry leaves, if using and add the tomato puree. Let it boil for 5 minutes.
Cover and cook, otherwise the tomato splits all over the stove top. Let it cook till it thickens and leaves oil at the corner, takes 10 minutes. Serve with rotis or spread on bread.
