Blueberry lemon cake

It's one year of blogging, cannot believe this. This one year of blogging gave me lot of new friends, helped me to try new Indian and other continental recipes. Learning more about photography and baking.Thanks to all my readers and blogger friends for your support and encouragement. At last in the one year of blogging I tried to complete my 100th post.

Coming to recipe, blueberry lemon cake is very moist with buttermilk and lemon flavor. If interested, you can add sugar on top and bake.  
 

Ingredients:

  • All purpose flour - 2 cup
  • Baking powder - 1 tbsp
  • Baking soda - 1 tsp
  • Salt - 1 tsp
  • Sugar - 1 cup
  • Blueberry - 1 cup
  • Butter + oil - 1/2 cup + 1/2 cup
  • Milk - 3/4 cup
  • Buttermilk -  3/4 cup
  • Lemon juice - 1 tbsp
  • Vanilla extract - 1 tsp
Method:




Preheat the oven for 350 deg F.

Sieve all purpose flour with baking powder, baking soda and salt. Mix lemon juice with milk and keep aside. This helps the cake to be moist. Wash the blueberries and dry in a paper towel and mix with 1 tsp of all purpose flour.

Beat the butter, oil and sugar till sugar melts. whisk milk, vanilla extract and buttermilk together. Stir the flour. Fold the 3/4 cup of blueberries slowly.

Grease the square or any pan,add 1/4 cup of berries and top them with batter. Bake for 15 to 20 minutes or till the tooth pick inserted in the middle comes out clean.

  11. Deepthi an 8 inch square pan would bake perfect. I did with homemade buttermilk. The buttermilk should not be more watery. It should be thick in consistency.

    Thanks for pointing that , it is 1/2 cup of butter and 1/2 cup of oil. Just updated now :)
