Vanilla-chocolate cake

I wanted to prepare layer cake for so long. But I was not so sure how to cut the cake and do frosting. While searching for a simple frosting my eyes got into sour cream frosting. It was so simple and very easy to prepare and it was not so heavy, so  didn't have a guilty conscious of having more :)

Since I brought sour cream more, I thought of using it in cake too. The cake turned so good. For the top layer I used Betty crocker chocolate frosting mixed with sour cream. Try this simple cake.





Ingredients:
Vanilla cake:

  • All purpose flour - 1.5 cup
  • Sugar - 3/4 cup
  • Sour cream -  1.25 cup
  • Baking powder - 1/2 tsp
  • Baking soda - 1/2 tsp
  • Oil - 1/4 cup
  • Vanilla extract - 1 tsp


Chocolate cake:

  • All purpose flour - 1 cup
  • Coco powder - 1/2 cup
  • Coffee powder - 1 tsp
  • Sugar - 3/4 cup
  • Sour cream - 1 cup
  • Baking powder - 1 tsp
  • Baking soda - 1/2 tsp
  • Oil - 1/2 cup

For frosting:

  • Sour cream - 1/2 cup
  • Powdered sugar - 1/4 cup
  • Roasted walnuts or cake crumbs - 1/2 cup
 Method:


Pre heat the oven to 350 deg F.

For vanilla:

Sieve the all purpose flour. In a bowl mix sour cream, baking powder and baking soda. Leave aside for 5 minutes. Whisk sugar,oil and vanilla extract with sour cream. Gradually mix flour and mix till smooth. Grease a round pan and pour the batter and bake for 10 - 15 minutes or bake until the tooth pick inserted in the middle comes out clean.

For chocolate:

Sieve the all purpose flour and cocoa powder. In a bowl mix sour cream, baking powder and baking soda. Leave aside for 5 minutes. Whisk sugar and oil with sour cream. Gradually mix flour and mix till smooth. Grease a round pan and pour the batter and bake for 10 - 15 minutes or bake until the tooth pick inserted in the middle comes out clean.


For frosting:

Whisk sour cream and powdered sugar well. When cools, slice the vanilla and chocolate cake into half . Smoother the sides and save the cake crumbs.

Apply a smooth layer of frosting on the top of  chocolate cake. Then alternate the vanilla and chocolate cake to 3 layers applying frosting on each top.Then apply frosting on sides and top layer and garnish with roasted walnuts or cake crumbs.

For the top and side layers I mixed Betty crocker chocolate frosting with the sour cream and sugar mixture.

Note:
  • Instead of roasted walnuts you can use cake crumbs.
  • If you want your frosting to be chocolate you can mix cocoa powder in sour cream mixture. 
  • Sour cream can be replaced with plain yogurt.
