Aloo paratha (bread with potato stuffing)

A bread with potato stuffing is perfect for lunch boxes and a filling food. Adding more cilantro gives a natural flavor to the parathas. the filling can be done earlier and stored in refrigerator.

This is delicious with natural yogurt and pickle. You can stuff any type of vegetable you want like grated carrot, cauliflower, cabbage, spinach,.....



Ingredients:

 For dough:
  • Whole wheat flour - 2 cups
  • Water - 1/2 cup 
  • Oil - 1 tbsp
  • Salt - as per needed

For filling:

  • Potatoes - 2 cups, boiled peeled and mashed
  • Onion -1, finely chopped
  • Ginger - 1 tsp, grated
  • Green chilly - 1, finely chopped
  • Cilantro - 1/4 cup, finely chopped
  • Oil - 2 tsp
  • Lemon juice - 1 tbsp

Method:

For dough, place whole wheat flour in a large bowl. Rub the oil and add salt. Pour water little by little and prepare a soft dough and knead for 5 minutes in hand or using a food processor.

For stuffing, in a pan, add a tsp of oil and fry onions for 2 minutes.  Then add green chilly and ginger. Add mashed potatoes and fry for 2 minutes. Switch it off add cilantro and lemon juice..


For preparing parathas:

Divide the dough into equal 12 portions. Take a portion and dust it with flour, flatten it and roll into small round shape. Place 1 portion of filling on it and cover, bringing the edges together.

Meanwhile, heat a flat frying pan. Again flatten, dust with flour and roll it into a round shape about 3 mm in thick.

Place the paratha on the hot pan and cook both sides poring a tsp of oil on each sides. Fry until light golden brown as well.

  21. do you mean put the filling on the paratha and cover / is that cover with another paratha ? so that 12 portions actually make 6 parathas ? thanks

  22. Skaterina you have to cover the parathas with the same dough and flatten it, which yields 12 parathas.
