Peerkangai (Ridge gourd) paal kootu

This is a simple kootu that can be done with vegetable like cucumber and zucchini. Since we are adding milk for grinding the color of kootu will be white. Tempering with coconut oil for kootu's really taste very nice.






Ingredients:

Peerkangai (Ridge gourd) - 1
Sugar - 1 tsp 
Salt - to taste

To grind:

Coconut - 1/4 cup
Jeera - 1 tsp
Green chilly - 3
Rice flour - 1 tsp
Milk - 1/4 cup

To temper:

Coconut oil - 2 tsp
Mustard - 1/4 tsp
Urad dal - 1 tsp
Hing - a pinch
Curry leaves - 5




Method:

Peel the skin of ridge gourd and cut into small chunks. In a sauce pan, add very little water and ridge gourd. Let it boil. Meanwhile, grind all the ingredients given to grind with milk.

After ridge gourd is cooked, add the ground paste. Add salt and a sugar. Let it boil for 5 minutes or till it turns to kootu consistency. In a small pan add the ingredients given to temper. Pour on kootu. Ready to serve.

  11. I was looking for a raw plantain pal kootu recipe which is my hubby's favorite. He even got a pair of fresh green plantains. This recipe sounds delicious. I guess I can use this for Plantains too :)
