Eggless coconut Macaroons

I had left over coconut flakes so i tried this with sour cream it came out well. It will be crunchy outside and soft inside. If you don't have sour cream you can add thick curd too... If you want rich version heavy cream can also be added.





Ingredients:

  • Sweetened coconut flakes - 4 cups
  • Condensed milk - 3/4 cup
  • Baking soda - 1/4 tsp
  • Sour cream - 1 tbsp
  • Vanilla extract - 1 tsp
  • Chocolate syrup - 1 tbsp (optional)




Method:

Combine condensed milk, baking soda, sour cream and vanilla extract in a large bowl. Add coconut flakes gradually and mix all the ingredients that they are evenly mixed.



Preheat the oven to 325 deg F. Scoop the macaroons in a baking sheet giving enough space.



Now place the sheet into the oven and bake for about 15 minutes. The bottoms of the macaroons should be little dark brown. After it cools down, if using chocolate syrup drizzle on macaroons.




Variation:

If using fresh coconut increase the amount of condensed milk. The fresh coconut tastes more than flakes.

If  the consistency is not thick , All purpose flour can be added.
