Masala Khichdi

This masala khichdi with lots of vegetables makes a great dish and a good weekend meal. You can use any vegetable of your choice. This is a healthy choice even for kids.



Ingredients:

  • Raw rice - 1 1/2 cups
  • Whole Moong dal - 1 cup
  • Onion - 2
  • vegetables (carrot, beans, potato, cauliflower, peas) - 1 cup
  • Tomato - 1
  • Ginger & Garlic paste - 1 tbsp
  • Water - 5 cups

To temper:

  • Oil  - 3 tbsp
  • Cloves - 2
  • Cinnamon sticks - small stick
  • Bay leaf - 1
  • Cardamon - 2

Method:



In a skillet, fry whole moong dal for 5 minutes in a medium flame. Soak with rice for 15 to 30 minutes and drain the water with the help of a strainer.

In a pan, heat oil  add all the ingredients given to temper. Put green chilly, onion, ginger & garlic paste stir for 2 minutes. Add all the vegetables one by one. put turmeric powder. Cook on a medium flame for 5 to 8 minutes.

Stir in the rice and whole moong dal for 2 to 3 minutes. Add water and transfer to a pressure cooker and cook for 15 mins or till soft. Serve with papad or plain curd.

Note:

  • You can use any type of rice, even basmati rice tastes good.
  • If you want it too mushy add more water.

  8. look at that. never had masala khichidi, only with ginger/garlic and all. Of course, I only eat khichadi when I'm sick, not sure what it is about this dish which soothes all the senses. :-)

    I make this khichdi every single day now , for my 10.5 month old :-) without so much spice ofcourse...Its the only food he will eat without much fuss and I think, whats bad abt it anyways, a full combo of Nutrients and Flavor. Khichdi rocks!!
