Mysore pak - I wanted to try for a long time, but somehow kept on postponing. Since Diwali is nearing I thought of doing some sweet recipes. I remember lots of comedies with mysore pak in Tamil movies. But anyhow made a mind to try.
After Krishna sweets have come we all had mysore pak of soft version, before that we had hard mysore pak with little pores in it. It's so long time I had those sweets. Many of them tell we have to use more ghee for mysore pak, so always avoid it. After seeing Vardhini's and Sharmille's mysore pak, I wanted to try with equal ratio of ghee, sugar and flour. This is an easy recipe try it.....

Ingredients:
Method:
In a tsp of ghee fry besan flour in a medium flame till you have a nice aroma. After it cools down sieve the flour. Make a paste of flour with 3/4 cup of ghee.
This will be in pouring consistency. In a pan, heat sugar and water and let it boil till it reaches one string consistency.
Immediately add the besan ghee mixture. Keep stirring. Gradually add the other 1/4 cup of ghee. When it comes together and form a ball leaving the edges, the mysore pak is done.
Meanwhile grease the plate with little ghee. Pour immediately in the greased plate. After it cools down, cut into any desired shape.
You will really be happy with what you did. Perfect mysore pak with equal ratio of ghee and flour.

- Ghee(clarified butter) - 3/4 cup + 1/4 cup
- Water - 1/4 cup

Note:
- If you want a smoother consistency, there should be no lumps. So remember to sieve before mixing in ghee.
- Roast the flour well, otherwise you will get the raw smell of flour.
- The single string consistency comes immediately after you get small, small bubbles.
